Viennese sauerkraut with potato+

Yield: 4 servings

Measure Ingredient
1 medium Onion, chopped
2 tablespoons Bacon or pork fat
2 cups Sauerkraut, (16 oz. can) drained, rinsed and liquid replaced by water
½ teaspoon Caraway seeds
¾ cup White wine
1 medium Potato, peeled and grated

Saute onion in fat until tender. Add remaining ingredients except potato. Simmer, covered, for 30 minutes. Add grated potato and simmer for another 30 minutes, stirring occasionally.
