Veggie crab cakes

Ingredients

2 | cups | Zucchini, grated (no need to peel) |
1 | cup | Seasoned bread crumbs |
1 | tablespoon | Old Bay seasoning |
Egg substitute or egg whites to equal 1 egg | ||
1 | tablespoon | Fat-free mayo |
1 | small | Grated onion |
Directions
Put grated zucchini on a towel and squeeze out all of the water. Mix all ingredients together and form into patties with your hands. Cook in a non-stick skillet ontil golden brown on both sides and done in the middle.
We had these with salsa, but you could make any kind of sauce, such as yogurt-cucumber, and they would be just as good.
