Smith island crab cakes

Yield: 4 Servings

Measure Ingredient
1 pounds Crab meat,picked over
2 \N Eggs
1 teaspoon Old Bay Seasoning
1 teaspoon Prepared mustard
1½ slice Of toasted white bread crumbs

Mix above ingredients except crabmeat with a whisk until smooth. Handle crabmeat as lightly as possible so it will not shred. Slowly add the crabmeat and stir with your hands very carefully until blended. Shape into patties and fry in 1½ inches of hot oil until golden brown.
