Vegetarian stir fry grilled pizza

Measure Ingredient
\N \N Canola oil; to cook
1 tablespoon Minced garlic
½ tablespoon Minced ginger
2 larges Red onions
\N \N Salt; to taste
\N \N Freshly-ground black pepper; to taste
2 cups Sliced shiitake mushrooms
1 cup Sliced yellow zucchini
1 cup Sliced green zucchini
2 \N Tomatoes; thinly sliced
⅓ cup Thai basil chiffonade
2 cups Grated mozzarella cheese

In a hot wok coated with oil, stir-fry garlic, ginger and onions. Season with salt and pepper and cook until onions are caramelized. Add mushrooms and zucchini and stir-fry until soft. Check for seasoning. Place filling on top of a grilled pizza dough. Cover with tomato slices and basil. Cover with cheese.

This recipe yields two 8- to 10-inch pizzas.
