|2 cups||Zucchini slices|
|10 \N||Eggplant slices|
|2 tablespoons||Olive oil|
|1 \N||Pizza crust|
|1 cup||Mozzarella cheese --|
|¼ cup||Roasted pepper slices|
|1 tablespoon||Fresh basil leaves --|
Preheat grill. Lightly salt zucchini and eggplant. Brush with oil.
Grill on both sides until tender. Sprinkle crust with cheese. Top with grilled vegetables, roasted peppers, basil and remaining cheese.
Place crust on grill 5 inches from coals. Cover and grill for 3 to 4 minutes until cheese is melted. Recipe By :
