Uff-da casserole

Yield: 4 Servings

Measure Ingredient
1 pounds Bulk sausage
½ pounds Fresh mushrooms
½ large Onion; diced
4 ounces Green chiles; diced
6 \N Eggs; (1 lb. 5 oz.)
½ teaspoon Salt
½ teaspoon Pepper; (1 lb. 5 oz.)
3 tablespoons Sour cream
8 ounces Cheddar cheese; grated
8 ounces Mozzarella cheese; grated
\N \N Salsa

Saute Sausage until good and brown, drain. Add onions, chilies, mushrooms.

Stir fry 1 minute. Mix eggs, sour cream and seasonings. Beat until well blended. Pour this into a 9 x 9 pan. Bake this at 400øF until eggs are soft and set. Remove from oven and put meat mixture on top. Top with both cheeses. Broil until cheese melts. Let set for a few minutes. Cut and serve with salsa.
