½ cup | Finely chopped onion |
2 cups | Italian Plum or whole pack tomatoes; coarsely chopped, with juice |
3 tablespoons | Tomato paste |
1 tablespoon | Finely chopped fresh basil |
1 teaspoon | Sugar |
\N \N | Salt and freshly ground pepper |
Heat the olive oil in a stainless steel saucepan. Add the onion; cook over moderate heat until soft but not brown. Add the tomatoes, tomato paste, basil, sugar, salt, and a sprinkle of pepper. Reduce heat and simmer, partially covered, for approximately 45 mins., stirring occasionally. Press through a fine sieve into a bowl or pan. Season to taste. Serve hot.
