Ingredients

| ½ | cup | Finely chopped onion |
| 2 | cups | Italian Plum or whole pack tomatoes; coarsely chopped, with juice |
| 3 | tablespoons | Tomato paste |
| 1 | tablespoon | Finely chopped fresh basil |
| 1 | teaspoon | Sugar |
| Salt and freshly ground pepper | ||
Directions
Heat the olive oil in a stainless steel saucepan. Add the onion; cook over moderate heat until soft but not brown. Add the tomatoes, tomato paste, basil, sugar, salt, and a sprinkle of pepper. Reduce heat and simmer, partially covered, for approximately 45 mins., stirring occasionally. Press through a fine sieve into a bowl or pan. Season to taste. Serve hot.
