|2 tablespoons||Olive oil|
|½ cup||Finely chopped onion|
|2 cups||Italian Plum or whole pack tomatoes; coarsely chopped, with juice|
|3 tablespoons||Tomato paste|
|1 tablespoon||Finely chopped fresh basil|
|Salt and freshly ground pepper|
Heat the olive oil in a stainless steel saucepan. Add the onion; cook over moderate heat until soft but not brown. Add the tomatoes, tomato paste, basil, sugar, salt, and a sprinkle of pepper. Reduce heat and simmer, partially covered, for approximately 45 mins., stirring occasionally. Press through a fine sieve into a bowl or pan. Season to taste. Serve hot.
