Tomato sauce #1

Yield: 6 Servings

Measure Ingredient
2 tablespoons Olive oil
½ cup Finely chopped onion
2 cups Italian Plum or whole pack tomatoes; coarsely chopped, with juice
3 tablespoons Tomato paste
1 tablespoon Finely chopped fresh basil
1 teaspoon Sugar
\N \N Salt and freshly ground pepper

Heat the olive oil in a stainless steel saucepan. Add the onion; cook over moderate heat until soft but not brown. Add the tomatoes, tomato paste, basil, sugar, salt, and a sprinkle of pepper. Reduce heat and simmer, partially covered, for approximately 45 mins., stirring occasionally. Press through a fine sieve into a bowl or pan. Season to taste. Serve hot.
