Fresh tomato sauce (#9)

Ingredients

2largesRipe tomatoes, about 8 oz.

½cupTomato or vegetable juice
½mediumRed onion, minced
¼cupSlivered fresh basil leaves
2tablespoonsOlive oil
1eachClove garlic, minced
½teaspoonSalt
xFreshly ground black pepper

Directions

1. Core the tomatoes; cut into ½-inch chunks. Transfer to a bowl.

2. Toss with the remaining ingredients. Let stand at least 30 minutes, tossing occasionally to blend flavors.
