Tomato basil pasta pomadoro style

Yield: 4 Servings

Measure Ingredient
12 ounces Fettuccine -- or
\N \N Penne Rigate, Tomato Basil
\N \N Flavored
¼ cup Extra virgin olive oil
2½ cup Tomatoes -- diced
¼ cup Fresh basil -- chopped
1 teaspoon Garlic -- minced
¾ cup Chicken broth
¼ cup Parmesan cheese -- grated
\N \N Salt and pepper to taste

Cook pasta according to package directions. Meanwhile, heat olive oil in large skillet. Add tomatoes, basil and garlic. Season with salt and pepper and saute for four minutes. Add chicken broth to pot and simmer for two minutes. Mix hot pasta with sauce in skillet and mix well. Sprinkle with Parmesan cheese and serve.

Makes 3 dinner or 6 side-dish servings. Source
