Three-bean and tuna salad

Ingredients

15ouncesCannellini beans; rinsed and drained
15ouncesGreat northern beans; rinsed and drained
15ouncesKidney beans; rinsed and drained
1largeBell pepper; chopped
1mediumOnion; chopped
¼cupFresh parsley; chopped
¼cupOlive or vegetable oil
2tablespoonsLemon juice
2tablespoonsCapers
¼teaspoonRed pepper sauce
Lettuce leaves
6⅛ounceTuna in water; drained
Lemon wedges; if desired

Directions

Mix beans, bell pepper, onion and parsley. Shake oil, lemon juice, capers and pepper sauce in tightly covered container. Toss oil mixture and bean mixture. Spoon onto lettuce. Top with tuna. Serve with lemon wedges.
