White beans with tuna salad

Measure Ingredient
1 pounds Dried white beans
1 large Onion - peeled and cut in half
3 \N Garlic cloves
½ cup Olive oil
1 \N 16 oz. can white tuna in water
1 \N Green pepper - chopped
1 \N Red pepper - chopped
1 \N Red onion - chopped
1 \N Lemon; juice of
1 bunch Arugula - chopped

Directions: Soak the white beans overnight to soften. Place in a large pot of water with garlic cloves and onion. Simmer for 1 hour. Remove beans and strain. Mix remaining ingredients. Add salt and pepper to taste. As an alternative, you can use white cannelloni beans, pre-softened, in place of the dry white beans.
