White beans with tuna salad

1 | 16 oz. can white tuna in water | |
1 | Green pepper - chopped | |
1 | Red pepper - chopped | |
1 | Red onion - chopped | |
1 | Lemon; juice of | |
1 | bunch | Arugula - chopped |
Directions: Soak the white beans overnight to soften. Place in a large pot of water with garlic cloves and onion. Simmer for 1 hour. Remove beans and strain. Mix remaining ingredients. Add salt and pepper to taste. As an alternative, you can use white cannelloni beans, pre-softened, in place of the dry white beans.
