Ingredients

Sweet red bell pepper; chopped

1cupFrozen or fresh peas
½teaspoonPepper
2teaspoonsPoppy seeds
¾cupCreamy cucumber dressing; (or your favorite)

Directions

In a large mixing bowl add all chopped vegetable ingredients. Add dressing and toss thoroughly. Add salt and pepper to taste, if you wish. Blend and toss well. Refrigerate to chill and serve. Crunchy, refreshing, healthy and delicious. Serve in a bowl or as a side dish on a bed of leaf lettuce.

Serves 6-8.
