Texas meatloaf

| 2 | tablespoons | MAZOLA corn oil |
| 1 | Green pepper coarse chopped | |
| 1 | large | Onion, chopped |
| 3 | Cloves garlic, minced | |
| 1½ | pounds | Lean ground beef* |
| 2 | Egg whites | |
| ¾ | cup | Old-fashioned oats |
| ¾ | cup | Barbecue sauce, divided |
| 1 | can | (4 oz) chopped green chilies undrained |
Directions
1. Spray 8½ x 4 ½ x 2 ½-inch loaf pan with cooking spray.
2. In large skillet heat corn oil over medium-high heat. Add green pepper, onion and garlic; stirring frequently, cook 4 minutes or until tender. Remove from heat. 3. In large bowl combine ground beef, egg whites, oats, ½ cup barbecue sauce and chilies. Stir in cooked vegetables. Spoon into loaf pan.
4. Bake in 350 F oven for 1 hour. Drain excess liquid.
5. Invert loaf onto serving platter. Spoon remaining ¼ cup barbecue sauce over top. Let stand 10 minutes before slicing.
