Measure | Ingredient |

¼ cup | White wine vinegar |
\N \N | Salt and freshly ground |
\N \N | Pepper -- to taste |
¾ cup | Olive oil |
1 tablespoon | Minced fresh tarragon |
In a small bowl, combine vinegar, salt and pepper, and minced tarragon.
Whisk in oil and let stand 5 minutes. Whisk again, then taste and adjust seasoning.
Makes 1 cup.
