Yield: 1 Servings
|¼ cup||White wine vinegar|
|Salt and freshly ground|
|Pepper -- to taste|
|¾ cup||Olive oil|
|1 tablespoon||Minced fresh tarragon|
In a small bowl, combine vinegar, salt and pepper, and minced tarragon.
Whisk in oil and let stand 5 minutes. Whisk again, then taste and adjust seasoning.
Makes 1 cup.
