Tangy mushrooms

Yield: 6 To 8 serv

Measure Ingredient
1 pounds Small mushrooms, stalks trimmed
1 cup Boiling water
2 tablespoons Lemon juice
5 tablespoons Olive oil
2 tablespoons Wine vinegar
2 cloves Garlic, minced
2 teaspoons Thyme, chopped
1 tablespoon Parsley, chopped

Place the mushrooms in a heatproof bowl. Combine the water and lemon juice and pour over the mushrooms. Let stand for 5 minutes, then drain well. Mix the remaining ingredients and pour over the mushrooms. Cover and refrigerate for at least 2 hours or overnight before serving. Serves 6 to 8 Typed in MMFormat by cjhartlin@...
