Taco bean bake

Yield: 8 Servings

Measure Ingredient
3 cups Red beans (already cooked)
½ cup Chopped onion
1 teaspoon Salt
2 teaspoons Chili powder
½ teaspoon Tabasco
1 can (15-oz) tomato sauce
1 can (15-oz) corn; drained
2 cups Shredded non fat cheese
2 cups Fat free baking mix
½ cup Fat free mayo
1 cup Nonfat milk
½ cup Egg substitute

Preheat oven to 350. Saute onion, add beans (you may want to use more than 3 c beans), salt, chili powder, tabasco, tomato sauce, and corn. Pour into Pam sprayed 13x9x2 pan. Sprinkle with cheese. Put baking mix in bowl, cut in fat free mayo, stir in 1/2c egg substitute, and milk. Spread over bean mixture. Bake 35 min or until browned nicely. Serves great with lettuce, tomatoe, and fat free sour cream.
