Sweet onion rings - country living

Ingredients

Vegetable oil for frying | ||
1¼ | cup | Unsifted all-purpose flour |
½ | cup | Cornstarch |
4 | teaspoons | Sugar |
1 | teaspoon | Ground red pepper |
1 | cup | Water |
2 | larges | Eggs, lightly beaten |
1 | large | Sweet onion, sliced into 1/4-inch-thick rings |
¼ | teaspoon | Salt |
Directions
1. In large skillet, heat ¼ inch oil until deep-fat thermometer registers 375F.
2. Meanwhile, in medium-size bowl, combine 1 C flour, the cornstarch sugar, and red pepper. Stir in water and eggs until batter is just combined.
3. Place remaining ¼ C flour in wide mouthed bowl or pie plate. In batches, coat onion slices with flour then dip coated onion rings into batter and place into hot oil. Fry onion rings until crispy and golden on one side; turn and fry until golden on other side-about 6 minutes in all.
4. Drain cooked rings on paper towels and keep warm until ready to serve. Season onion rings with salt.
