Yield: 1 Servings
|1 pounds||Dried lima beans|
|1 pounds||Brown sugar (dark)|
|1 small||Onion, chopped|
Cover beans with water and soak overnight. Next day, drain beans, add fresh water and boil (simmer actually) for about 20 minutes until some of the beans crack. At the same time, cut bacon into small pieces and fry; add onion to frying bacon.
In bean pot (I use my crock pot) layer beans, bacon and brown sugar. Use liquid from cooking beans to cover bean mixture. Bake, covered, for about 4 hours. If you do this in the oven, the temp. should be 250 - 300 degrees.
Check; add liquid if necessary. They should be brown and sweet.
