Dried lima beans

1 | pack | Dried lima beans, soaked overnight |
1 | medium | Onion, chopped |
1 | large | Carrot diced |
¼ | teaspoon | Liquid smoke (up to 1/2) |
Dried beans are an excellent source of protien and other nutrients.
However, many bean recipies I have ask for some type of meat product to be cooked with the beans. One of my favorite dried beans is the large dried lima beans. I modified the original receipe and, I believe, have recreated the original flavor with no fat.
Put all ingredients except liquid smoke in a crockpot and add enough water to cover the beans by about ½ inch. Cook on low for 4 to 6 hours (the actual time doesn't make a lot of difference). Just before serving, add the liquid smoke (I find if I add it in the beginning the flavor cooks out).
Add additional water to adjust thickness of the broth.
