Sweet and sour slaw (brigtsen's)

Ingredients

¼cupUnseasoned rice vinegar
¼cupGranny smith apple; peeled, grated
1teaspoonGranulated white sugar
1teaspoonSoy sauce
¼teaspoonSalt
teaspoonTabasco sauce
1tablespoonSesame oil
2cupsRed cabbage; very thinly sliced
2cupsNapa cabbage; very thinly sliced
OR green cabbage
cupCarrot; peeled, grated
cupRoasted unsalted peanuts
¼cupRed onion; julienned
¼cupRed bell pepper; julienned
¼cupYellow bell pepper; julienned
cupChives; thinly sliced
OR green onions

Directions

In a mixing bowl, add the vinegar, apple, sugar, soy sauce, salt and Tabasco. Blend well with a wire whisk. Slowly add the sesame oil in a thin stream, whisking constantly. Add the remaining ingredients and blend well for 3-4 minutes. Refrigerate for one hour, stirring occasionally, before serving.
