1½ pounds | Sweet potatoes, cut in 1/4 inch thick rounds |
¼ cup | Water |
1 pounds | Lean ground beef |
10 eaches | Ounces chopped spinach, thawed and squeezed dry |
½ cup | Chopped scallions |
⅓ cup | Dry bread crumbs |
3 tablespoons | Teriyaki sauce |
1 tablespoon | Oriental sesame oil |
½ teaspoon | Minced garlic |
⅓ cup | Sweet and sour stir fry sauce |
Overlap potato slices in a shallow 9-10 inch microwave dish. Add water, cover and microwave on high for 9-10 minutes. Turning to insure even cooking. Cook until almost tender. Meanwhile mix beef, spinach, scallions, bread crumbs, teriyaki sauce, sesame oil and garlic. Shape into 4 small loaves. Place spoke fashion in another shallow 9-10 inch microwave dish. Remove potatoes from microwave and let stand, covered on a heat proof surface. Cover meat loaves with waxed paper and microwave on high for 5 minutes. Rotate meat loaves in dish and spoon on 3 tbsp of the stir fry sauce. Cook another 2-3 minutes or until meat is no longer pink. Drain any water from sweet potatoes. Spoon on remaining stir fry sauce. When meatloaves are done, uncover potatoes and microwave 1-2 minutes on high to heat through. Serves 4. Per serving: 601 cal, 33 g pro, 60 g carbo, 28 g fat, 85 mg chol, 814 mg soduim.
