1 | medium | Onion, chunked |
1 | each | Clove garlic, pressed |

2 | mediums | Carrots, sliced |
1 | medium | Green bell pepper |
Seeded, chunked | ||
2 | cans | Dole pineapple chunks |
Undrained | ||
¼ | cup | White vinegar |
3 | tablespoons | Brown sugar |
3 | tablespoons | Catsup |
3 | tablespoons | Soy sauce |
1 | tablespoon | Cornstarch |
1 | teaspoon | Ground ginger |
2 | cups | Hot cooked rice |
Directions
Cut pork or chicken into bite sized pieces. Brown in oil. reduce heat to low, add onion and garlic. Cover, cook 10 minutes. Add carrots and green pepper. Combine remaining ingredients, except rice. Stir into skillet. Cover, simmer 10 minutes longer. Serve with rice.
