Summertime chicken salad

Yield: 6 servings

Measure Ingredient
½ cup Mayonnaise Dressing BEST FOODS Reduced Fat, Cholsterol Free or Light Mayonnaise
2 tablespoons Lemon or lime juice
1 teaspoon Sugar
½ teaspoon Ground ginger
¼ teaspoon Salt
⅛ teaspoon Pepper
1 teaspoon Curry powder (optional)
2 cups Cubed, cooked chicken
4 \N Peaches or nectarines; cubed
1 cup Sliced celery (2 ribs)
¼ cup Sliced green onions
¼ cup Toasted slivered almonds (optional)

1. In large bowl whisk together mayonnaise, lemon or lime juice, sugar, ginger, salt and pepper (for curried chicken salad whisk in curry powder).

2. Stir in chicken, peaches, celery and green onions.

3. Cover and chill. Before serving, stir in almonds if desired.

Nutrition information per serving (with Reduced Fat): 180 Calories, 15g Protein, 17g Carbohydrates, 6g Fat, 40mg Cholesterol, 300mg Sodium.
