Summertime chicken salad

½cupMayonnaise Dressing BEST FOODS Reduced Fat, Cholsterol Free or Light Mayonnaise
2tablespoonsLemon or lime juice
1teaspoonSugar
½teaspoonGround ginger
¼teaspoonSalt
teaspoonPepper
1teaspoonCurry powder (optional)
2cupsCubed, cooked chicken
4Peaches or nectarines; cubed
1cupSliced celery (2 ribs)
¼cupSliced green onions
¼cupToasted slivered almonds (optional)

Directions

1. In large bowl whisk together mayonnaise, lemon or lime juice, sugar, ginger, salt and pepper (for curried chicken salad whisk in curry powder).

2. Stir in chicken, peaches, celery and green onions.

3. Cover and chill. Before serving, stir in almonds if desired.
