Sugar and spice carrot cake

Measure Ingredient
4 \N Eggs
1½ cup Brown sugar
1½ cup Grated carrots (3 large)
1⅓ cup Oil
2¼ cup Flour
2½ teaspoon Cinnamon
1½ teaspoon Baking soda
1 teaspoon Salt

Beat eggs & sugar until fluffy & slightly thick. Add carrots & oil; blend well. Combine flour, cinnamon, soda & salt. Stir into egg mix.

Pour into greased 13X9X2" baking pan. Bake at 350 for 45 minutes, or until cake tests done. Cool in pan. Frost. Frosting: Blend 1 (3 oz) pack softened cream cheese & ¼ cup softened butter. Gradually blend in 2¼ cups confectioners sugar & 1 tsp. orange peel.
