String bean salad

Ingredients

1poundsString beans, blanched & sliced
2eachesGreen chilies, julienned
2eachesRed chilies, julienned
½poundsTofu, pressed & cubed
½cupCoconut milk
2tablespoonsSoy sauce
4tablespoonsLime juice
2tablespoonsSugar
1tablespoonChili sauce, see recipe

Directions

Place the beans on a large serving platter & arrange the green & red chilies & tof cubes over the top. In a small bowl, mix together the coconut milk, soy sauce, lime juice, sugar & chili sauce. Just before serving, pour the dressing over the salad.
