Two bean and rice salad

Yield: 1 Servings

Measure Ingredient
3 cups Rice; cooked, cold
1 15 oz can pinto beans; rinsed, drained
1 15 oz can black beans; canned, rinse, drain
1 10 oz packag green peas; frozen, thawed
1 Red onion; chopped
2 4 oz cans green chiles; chopped
¼ cup Cilantro
1 cup Celery; thinly sliced
⅓ cup White wine vinegar
¼ cup Olive oil
2 Tbl water
Salt and pepper



Do use this ratio for the dressing. Try seasoned vinegar too.
