Strawberry muffins #2

Yield: 12 servings

Measure Ingredient
1¼ cup Flour
2½ teaspoon Baking powder
¼ teaspoon Salt
1 cup Rolled oats
½ cup Sugar
1 cup Milk
⅓ cup Butter, melted
\N \N Egg, beaten
1 teaspoon Vanilla
1 cup Strawberries, chpd

Preheat oven 425 deg. Sift flour, baking powder, and salt into a large bowl. Stir in oats and sugar. Set aside. Combine milk, butter, egg, and vanilla in a small bowl. Stir milk mixture into dry ingredients until just moistened. Stir in strawberries. Spoon batter into muffin cups, filling each ⅔ full. Bake 15-18 mins or until lightly browned and toothpick inserted comes out clean.
