Strawberry surprise muffins

Yield: 12 Servings

Measure Ingredient
⅓ cup Melted butter or margarine
1 cup Yoghurt
2 \N Eggs
½ cup Sugar
2 teaspoons Baking powder
⅔ cup Oat bran
1¼ cup Flour
¼ cup Sliced almonds
½ cup Strawberry jam




Preheat oven to 400øF, prepare pans. Combine wet mix ingredients & mix well. Add the dry mix to the wet mix until just combined. Spoon half of the batter into each pan, put a little strawberry jam into the centre of each muffin & top off with remaining batter. Scatter a few extra sliced almonds on top if desired & bake for 15-20 mins. Makes 12.
