Strawberry

Yield: 16 servings

Measure Ingredient
2 cups Unbleached flour
1 cup Granulated sugar
½ teaspoon Baking soda
2 teaspoons Baking powder
1 teaspoon Cinnamon
¼ teaspoon Salt
2 Egg whites -- whipped
1 teaspoon Vanilla
½ cup Applesauce -- at room
Temperature
2 cups Strawberries* -- chopped

Preheat oven at 350. Prepare pan(s) with cooking spray and flour.

In a mixing bowl, combine flour, sugar, baking powder, baking soda, cinnamon, and salt. In another bowl, combine egg whites, vanilla, applesauce, and strawberries. Mix dry ingredients with wet ingredients just until moistened. Pour into prepared pan(s) and bake for 25 minutes depending on pan size.
