4 ounces | Fettucine noodles, uncooked |
4 ounces | Spinach fettucine noodles, uncooked |
4 ounces | Ham, deli-style, reduced fat diagonally sliced |
2 tablespoons | Chives; chopped |
1 cup | Frozen peas thawed and drained |
¼ cup | Parmesan cheese; grated |
⅛ teaspoon | Paprika |
Recipe by: Cooking Healthy Series Vol 1. # 5 1. Combine milk, cottage
cheese, cornstarch, mace and black pepper in blender or food processor; process until smooth. Set aside.
2. Cook noodles according to package directions, omitting salt.
Meanwhile, spray large nonstick skillet with nonstick spray. Cook and stir ham and chives over medium heat until ham is lightly browned.
Stir in milk mixture and peas; cook over medium heat until thickened.
3. Remove from heat. Drain noodles; combine with milk mixture. Add Parmesan cheese. Toss to coat evenly. Sprinkle with paprika; serve immediately.
