Steamed flounder

Measure Ingredient
1½ pounds Flounder fillets
1 teaspoon Sugar
1 tablespoon Soya sauce
1 tablespoon Grated ginger lengths
2 cups Hot, cooked rice
1 teaspoon Salt
2 tablespoons Dry sherry
3 tablespoons Vegetable oil
4 Scallions cut into 2-inch

Place salted fish in a steamer. Either one of those oriental basket steamers that fit on top of a kettle or a small canner or other pot with a basket will do. In either case the fish should be placed on a layer of aluminum foil. Get a small amount of water under the steamer boiling/ Steam covered for 10 minutes. Transfer to serving platter and serve with hot rice and additional soya sauce if desired.
