Steak diane

Yield: 4 servings

Measure Ingredient
-G GRANAROLI (XBRG76A)
2 tablespoons Butter
2 tablespoons Olive oil
4 6 oz fillet steaks
4 cloves Garlic crushed
1 medium Onion chopped
½ pounds Mushrooms sliced
1 teaspoon Dijon mustard
1½ tablespoon Worchestershire sauce
x Salt and pepper
3 ounces Brandy
½ cup Heavy cream

Use 2 skillets. Heat the first skillet very hot and add ½ the oil and butter. Brown steaks on both sides. Flambe with brandy. In the second skillet, add the rest of the butter and oil. Sautee garlic, onion and mushrooms and discard. Add worcestershire saucem mustard, and cream. Season with salt and pepper. After all is blended well add the steaks and allow to soak on very low `til all the meat is flavored well.(1 min. on each side) Top with parsley and serve on a warm platter. (wrv)
