Steak diablo

Yield: 8 Servings

Measure Ingredient
2 tablespoons Olive oil
1 medium Yellow onion; diced fine
½ cup Fresh garlic; chopped fine
2 cups Green chile peppers; roasted, peeled; seeded, chopped
2 teaspoons Dried oregano (Mexican prefered)
Salt to taste
12 slices Provolone; cut in half
8 6-oz steaks (New York; etc)

Heat olive oil over medium heat, add garlic and onion. Saute until onion turns transparant, 5-6 min. Add green chile, oregano and salt, cook another 5 minutes and remove from heat. Grill steaks until ⅔ done (maybe 3-4 min/side). Place steaks in preheated broiler, top with green chile sauce and provolone.. Broil 1-2 min until cheese is melted and steaks are done.
