Yield: 8 Servings
|2 tablespoons||Olive oil|
|1 medium||Yellow onion; diced fine|
|½ cup||Fresh garlic; chopped fine|
|2 cups||Green chile peppers; roasted, peeled; seeded, chopped|
|2 teaspoons||Dried oregano (Mexican prefered)|
|Salt to taste|
|12 slices||Provolone; cut in half|
|8||6-oz steaks (New York; etc)|
Heat olive oil over medium heat, add garlic and onion. Saute until onion turns transparant, 5-6 min. Add green chile, oregano and salt, cook another 5 minutes and remove from heat. Grill steaks until ⅔ done (maybe 3-4 min/side). Place steaks in preheated broiler, top with green chile sauce and provolone.. Broil 1-2 min until cheese is melted and steaks are done.
