Spring pea salad

Yield: 6 To 8

Measure Ingredient
10 ounces Fresh or Frozen Peas
1 cup Celery; diced
1 cup Cauliflower; chopped
¼ cup Green or Spring Onion; thinly sliced
2 tablespoons Pimiento; chopped
1 cup Cashews; chopped
¼ cup Cooked Bacon; crumbled
½ cup Sour Cream
1 cup Prepared Ranch Salad Dressing
½ teaspoon Dijon Mustard
1 small Clove Garlic; minced

Rinse the fresh or frozen peas in hot water and drain thoroughly.

In a large mixing bowl, combine the peas with the celery, cauliflower, green onion, pimiento, cashews, and bacon. Mix in the sour cream.

In a separate mixing bowl, whisk together the Ranch salad dressing, Dijon mustard, and garlic.

Pour the mixture over the vegetables and toss gently to blend.
