Spring pea salad

1cupCelery; diced
1cupCauliflower; chopped
¼cupGreen or Spring Onion; thinly sliced
2tablespoonsPimiento; chopped
1cupCashews; chopped
¼cupCooked Bacon; crumbled
½cupSour Cream
1cupPrepared Ranch Salad Dressing
½teaspoonDijon Mustard
1smallClove Garlic; minced

Directions

Rinse the fresh or frozen peas in hot water and drain thoroughly.

In a large mixing bowl, combine the peas with the celery, cauliflower, green onion, pimiento, cashews, and bacon. Mix in the sour cream.

In a separate mixing bowl, whisk together the Ranch salad dressing, Dijon mustard, and garlic.

Pour the mixture over the vegetables and toss gently to blend.
