Spinach roasted garlic vinaigrette (hl)

Ingredients

QuantityIngredient
3ouncesFresh cello spinach
1Clove fresh garlic; roasted, no color
½cupCanola oil
¼cupRaspberry vinegar
1pinchNutmeg
2Turns fresh ground pepper
1pinchSea salt; if desired

Directions

Blend all ingredients, except for the oil, in a blender. Blend on medium speed for 2 minutes, then stream in the oil. Taste and season if desired.
