Spinach salad with strawberry vinaigrette

Ingredients

| 3 | tablespoons | White Wine Vinegar |
| 2 | tablespoons | Red Onion; Chopped |
| ½ | teaspoon | Dry Mustard |
| ¾ | teaspoon | Salt |
| ⅓ | cup | Olive Oil |
| ¾ | cup | Strawberries; Sliced |
| 1 | pack | Fresh Spinach; (10 Oz) |
| 1 | cup | Strawberries; Sliced |
| ¼ | cup | Red Onion; Diced |
Directions
In work bowl of food processor fitted with steel knife, process sugar, vinegar, the 2 T onion, dry mustard, and salt. With machine running, slowly pour oil through feed tube, processing until thick. Add the ¾ c strawberries; process until smooth. Chill several hours or overnight. In large salad bowl, combine remaining ingredients; toss with dressing. Serve immediately.
NOTES : This colorful, sweet combination is perfect for a spring dinner.
