Spinach puree

Ingredients

| 1 | pounds | Fresh spinach, cleaned |
| ¼ | cup | Water |
| ½ | teaspoon | Salt |
| 1 | medium | Garlic clove, minced |
| 1 | each | Black pepper to taste |
Directions
Cook the spinach without added water in a covered pot fro just a few minutes - until tender & very bright green.
Transfer to a blender & with ¼ cup water, puree till very smooth.
Place in a small bowl. Thin to desired consistency & season with garlic, salt & pepper. Serve on cold pasta or on hot baked potatoes.
