Spinach puree

Ingredients

1poundsFresh spinach, cleaned
¼cupWater
½teaspoonSalt
1mediumGarlic clove, minced
1eachBlack pepper to taste

Directions

Cook the spinach without added water in a covered pot fro just a few minutes - until tender & very bright green.

Transfer to a blender & with ¼ cup water, puree till very smooth.

Place in a small bowl. Thin to desired consistency & season with garlic, salt & pepper. Serve on cold pasta or on hot baked potatoes.
