Spinach and onion dip

1largeOnion(s), chopped
2largesGarlic clove(s), minced
10ouncesPkg frozen spinach, thawed
¾Carton fat-free sour cream (about 6 oz)
¼teaspoonGround white pepper
¼teaspoonGround red chile pepper powder
¼teaspoonGround cumin
¼teaspoonSeasoned salt

Directions

Heat oil in heavy skillet over medium heat. Add onions and garlic and saut until golden brown, about 10 minutes. Add spinach and saut for about 2 minutes more. Let cool. Pure in blender or food processor along with the sour cream and all the spices. Adjust seasoning; add more chile pepper powder if you like it very hot. Serve with crackers or raw vegetables.

Makes about 2 cups.
