Spicy mango ketchup

Ingredients

| 1 | Red onion, diced fine | |
| 1 | tablespoon | Chopped garlic |
| 2 | tablespoons | Unsalted butter |
| 1 | Mango, diced | |
| ½ | cup | Rice wine vinegar |
| ¼ | cup | Ketchup |
| ½ | cup | Brown sugar |
| 1 | Chipotle, pureed | |
| ½ | tablespoon | Ground ginger |
| ½ | tablespoon | Ground cinnamon |
| 1 | teaspoon | Ground cloves |
Directions
In a saucepan, sweat the onions and garlic. Add the mangoes and continue to cook for 3 minutes. Add remaining ingredients and bring to a boil. Reduce heat and simmer for 5 minutes. Puree and season to taste with salt and pepper.
