1½ | pounds | Cat fish fillets; skinned |
1 | teaspoon | Minced garlic |
2 | tablespoons | Olive oil |
1 | teaspoon | Ground coriander |
1 | Yellow onion; thinly sliced | |
½ | cup | Plain yogurt |
3 | JalapeƱo peppers; seeded and minced | |
2 | teaspoons | Fresh ginger; minced |
¼ | cup | Cucumbers; deseeded, peeled and sliced thinly |

Preheat oven to 400°F Lay fish in a shallow baking dish, overlap any thin sections. Brush with 1 Tbsp of olive oil. Mix yogurt and cucumbers and set aside. Heat remaining oil in a frying pan, sauté onion, peppers, ginger and garlic until onion is soft, about 4 mins; stir in coriander. Sprinkle mixture over fish and bake in oven until fish is cooked, about 10 - 12 mins. Serve with a yogurt cucumber mix to garnish.
