Speck with fresh tomatoes and mozzarella

Ingredients

| 2 | Ripe; juicy tomatoes | |
| 4 | ounces | Ball whole-milk mozzarella |
| 6 | Pitted green olives; quartered | |
| 8 | Fresh basil leaves; shredded, up to 10 | |
| Salt; to taste | ||
| ¼ | cup | Extra-virgin olive oil |
| Freshly ground black pepper; to taste | ||
Directions
1. Arrange the slices of speck on serving dishes.
2. In a small bowl combine the tomatoes, mozzarella, olives, and basil.
Season lightly with salt. Add the olive oil and mix everything well. Spoon this mixture loosely over the speck, season with a few grindings of pepper, and serve.
NOTE: Speck is a smoked ham that is a specialty of the Trentino-Alto Adige region in northeastern Italy. It is available at many Italian markets or specialty food shops.
