Spam quiche

Ingredients

| 1 | can | Spam (12 oz.) |
| 1 | small | Onion, sliced thin |
| 5 | Eggs OR | |
| 4 | Eggs and 2 egg yolks | |
| 1 | tablespoon | Flour |
| 2 | cups | Heavy cream Salt and pepper to taste Nutmeg |
| 2 | tablespoons | Butter Pie crust made with lard or butter |
Directions
Cut the Spam into ½" dice and fry it in its own fat until it comes out somewhat crispy on some sides. Remove, drain, and set aside. Saute the onion in the same fat. Remove, drain, and add to the Spam bits.
Butter and flour a 9" pie tin. Press the crust into this tin and flute the edge attractively. Sprinkle the Spam and arrange the onion over the crust.
Beat the eggs, flour, and cream together. Season to taste. Pour this batter carefully over the Spam into the crust. Dot with butter.
Bake at 350 for 35 min or until done. Let stand briefly to set and then serve.
