2 cups | Chicken; cooked, finely chopped |
1½ cup | Almonds; finely chopped |
1 tablespoon | Green onion; finely chopped |
4 tablespoons | Major Grey's chutney; chopped |
8 ounces | Cream cheese; softened |
¼ cup | Mayonnaise |
2 teaspoons | Curry powder |
\N \N | Salt to taste |
1 cup | Grated coconut |
\N \N | Candied orange peel optional |
Combine chicken, almonds, green onion and chutney. In a separate bowl, blend cream cheese, mayonnaise and curry powder. Combine chicken mixture and cream cheese mixture. Chill. Shape into bite-size balls. Roll each ball in grated coconut. Refrigerate, covered, until ready to serve. Garnish with tiny yellow and white flowers or candied orange peel.
