Snappy bean bake

Yield: 2 servings

Measure Ingredient
3 ounces Broccoli flowerets; in bite- size pieces
3 ounces Snap beans; cut into bite- size pieces
3 ounces Tofu; cut into 1/2-inch cubes
3 ounces Lima beans; cooked
1½ ounce Brazil nuts; chopped
2 tablespoons Soy oil
1 teaspoon Mustard
2 teaspoons Fresh chives; minced
1 teaspoon Fresh parsley; chopped
½ teaspoon Tarragon
½ teaspoon Salt

Preheat oven to 350 degrees. Lightly grease 4 x 8 baking pan with soy oil. Combine all ingredients and bake for 20 minutes with a cover.
