Snappy bean salad

Yield: 4 servings

Measure Ingredient
225 grams Green beans
225 grams Mangetout peas
2 Spring onions; up to 3
3 Dsp olive oil
1 Dsp honey
1 Dsp sherry
Salt and pepper
1 Dsp parsley; finely chopped

DRESSING

TO SERVE

Lightly steam the beans and mangetout peas. Mix while still warm with the spring onions.

To prepare the dressing, mix together the hot oil, honey and sherry, add salt and pepper to taste. Pour over the vegetables and serve warm. Garnish with chopped parsley.
