Snap beans and fresh herbs

Ingredients

| 1 | pounds | Fresh yellow/green beans |
| 2 | Scallions; finely chopped | |
| 2 | tablespoons | Fresh mixed herbs: sage, tarragon, thyme, marjoram or basil |
| 2 | tablespoons | Olive oil |
| 2 | teaspoons | Dijon mustard |
| ½ | Lemon | |
| Salt and pepper to taste | ||
Directions
Trim beans and cut into 2" pieces. Steam them with a little water in a covered saucepan about 5 min until cooked but still a little crisp.
Drain and toss with the seasonings. Serve hot or cold as a salad.
