Snap beans and fresh herbs

Ingredients

1poundsFresh yellow/green beans
2Scallions; finely chopped
2tablespoonsFresh mixed herbs: sage, tarragon, thyme, marjoram or basil
2tablespoonsOlive oil
2teaspoonsDijon mustard
½Lemon
Salt and pepper to taste

Directions

Trim beans and cut into 2" pieces. Steam them with a little water in a covered saucepan about 5 min until cooked but still a little crisp.

Drain and toss with the seasonings. Serve hot or cold as a salad.
