Smoke-out breakfast bars

Ingredients

cupBrown sugar; packed
2Eggs
cupMolasses
cupAll-purpose flour
1teaspoonBaking soda
1teaspoonSalt
1teaspoonGround cinnamon
2cupsOatmeal; (I think I used regular but you could probably use quick too)
½cupChopped walnuts
1cupRaisins; or dried cherries, or dried cranberries
1cupSemi-sweet chocolate pieces or chunks

Directions

from the "Marlboro Country Cookbook" Combine sugar, butter, eggs, and molasses in a large mixing bowl. Stir together flour, soda, salt, and cinnamon; add to first mixture and stir to mix well. Stir in oatmeal, walnuts, raisins, and chocolate pieces. Spoon into a greased 13 by 9 baking pan and bake in a 400 degree oven for 12-15 minutes or until done(I think it took longer). Cut into bars to serve.

Makes 2 - 3 dozen bars.

My notes: Made with a berries and cherries mix from Sam's Club(dried strawberries, blueberries, and cherries) and they were delicious. My friend made hers with cranberries and loved them, but said mine were even better.

I used only1/2 cup of chocolate chips, and added more fruit, to reduce fat.

You could also use miniature chips and use fewer chips too to spread out the flavor and still reduce the fat a bit. I used fewer walnuts. You could use pecans as well. These froze well, and you can even eat them a bit frozen (I thawed them quickly in the micro once for lunch guests and they turned out fine). These are RICH and I really would not make a whole breakfast of them!
