Fruit and nut breakfast bars

Yield: 1 Servings

Measure Ingredient
3 cups Oatmeal; quick cooking
2 cups Coconut; flaked
1 cup Almonds; sliced
½ cup Walnuts; chopped
1 cup Golden raisins
½ cup Pitted dates
½ cup Apricots; dried, cho
½ cup Flour
½ teaspoon Salt
3 \N Eggs; lightly beaten
¾ cup Honey
⅓ cup Tasteless oil

Preheat oven to 350 degrees. Combine oats, coconut, almonds and walnuts in large roasting pan. Bake 18 minutes, stirring once. Cool well Combine oat mixture, raisins, dates, apricots, flour and salt in bowl. Stir in eggs, honey and oil, mixing well. Press into 2- 8 inch pans which have been greased. Bake for 20 minutes or until set. While still warm, cut into 2 inch squares. Wrap tightly in aluminum foil to store.
