Shiitake saute

| 8 | larges | Fresh shiitake mushrooms |
| 2 | tablespoons | Vegetable oil |
| 1 | tablespoon | Mirin or sweet sherry |
| 1 | tablespoon | Soy sauce |
| ½ | teaspoon | Sugar |
Directions
Cut off and discard tough mushroom stems and cut caps into wedges.
Heat oil in skillet. Add mushrooms and stir-fry until almost tender.
Add mirin, soy sauce and sugar and toss to coat mushrooms.
