½cupFlour
2teaspoonsSalt
¾cupButter
½cupDry sherry
2tablespoonsSoy sauce
2tablespoonsLemon juice
¼cupGinger-chopped

Directions

Combine flour and salt, coat the pheasant pieces with the mixture.

Melt a half cup butter, brown pheasant on all sides and place pheasant pieces in a covered dish. In a saucepan combine the remaining butter, sherry, soy sauce, lemon juice and ginger. Bring to a boil stirring constantly and pour over pheasant. Bake in a preheated 350 oven for about one hour or until tender. Turn pheasant once during baking.
